Celebrate Pancake Day with a French recommendation: A Recipe from Our Head Chef, David.
This Pancake Day, why not try treat yourself to a classic French delicacy? Our talented French Head Chef, Dave, has been treating guests with his culinary talents for more than five years here in The Dovecote Café, and his perfect French crepes are among the best!
Unlike thick American pancakes, French crepes are thin, delicate, and perfectly versatile. Whether you like them sweet with a dusting of sugar, filled with chocolate or fruit, or maybe even savoury with cheese and ham, Dave’s recipe has you covered. With just a few simple ingredients and a bit of patience, you can create restaurant-quality crepes right in your own kitchen!
We’ve asked Dave to share his top tips and step-by-step instructions so you can recreate the magic at home. Whether you’re making them for breakfast, dessert, or as a fun family activity, Dave’s recipe will have everyone coming back for seconds.

Ingredients:
500g plain flour
8 eggs
1.5 litres of milk
5g salt
200g melter butter
50g sugar
Method:
In a large mixing bowl, add the flour, eggs, salt and sugar then mix until combined.
Slowly mix in the milk until the mixture is nice and smooth
Finally add the melted butter and stir until thoroughly combined.
Important – Leave to rest for 2-3 hours before cooking.
When it’s time to cook, lightly oil the frying pan and heat. Pour a thin layer of the mixture into the frying pan ensuring it reaches the edges. Once cooked on one side, flip over and cook the other side. This should only take 1-2 mins to cook altogether.
Pocket Fold Crepe
Place your crepe on the plate and spoon your filling in the middle.
Fold the left and right sides towards the middle, the folds should overlap slightly
Now fold the upper and bottom towards the middle creating a square pocket
Fold over crepe
Place crepe on a plate with the best side facing down
Spoon filling into the middle of the crepe from top to bottom
Fold the left and right sides towards the middle, the folds should overlap slightly
And serve!
